Made with fresh tomatoes and a carefully balanced blend of spices, our Rogan Josh is slow-simmered over a low flame until reaching a rich, fragrant sauce with deep, lightly smoky flavour. This iconic Kashmiri curry combines character and balance, for an experience that’s both hearty and refined.
A dish with a story
Rogan Josh was born in the Kashmir valley, introduced by the Persian-descended Mughals, its name literally meaning “meat in red heated sauce”.
A traditional Kashmiri festive dish, it’s part of the famous “wazwan”, the great multi-course Kashmiri banquet.
Today one of the best-known and most-loved curries internationally, a symbol of the richness of north Indian cuisine.
The intense red colour of traditional Rogan Josh comes from specific Kashmiri chillies: our version adapts the recipe to locally available ingredients.
