A generous blend of rice, lentils and spices, Mulligatawny is a hearty, medium-spicy soup that warms you up as much as it fills you. Born from the meeting of south Indian culinary traditions and British colonial appetites, it strikes a perfect balance between creaminess and spiced character.
A dish with a story
The word “mulligatawny” comes from the Tamil “milagu thanni”, literally “pepper water”, a soup eaten in south India long before colonisation.
Adopted and transformed by British colonists in 18th-century India, it became an Anglo-Indian classic exported all the way to the UK.
Today it remains one of the few Indian soups widely known in the West, a symbol of Anglo-Indian culinary fusion.
Mulligatawny’s history is a great example of how a dish can change radically as it crosses cultures: the original Tamil version was far simpler than the one popularised in England.
